How to start a American Style Pancake Business?

Hello, I have lived in the USA for 25 yrs, and have been here in the UK for over 11 yrs now, and have a vivid interest in starting a american style pancake cafe in the Leeds area, I have been in touch with the Business Link and will be attending workshops, I have not seen any pancakes cafes in Leeds, and am wondering if this type of business will be successful. Can anyone advise me or give me some feed back. Thanks.
